Tripe and cardamom (tripe recipe from Egypt)

Ingredients

1 kg tripe
Tomato sauce
1 Bay leaf
3 cardamom pods
1/2 cup hulled grain

Directions

Cut tripe into narrow strips, bring to a boil for 5 minutes, then discard water. Repeat boiling with bay leaf and cardamom tied in muslin bag until tender. Discard bag, cover with rinsed hulled grain and tomato sauce, and cook for one more hour over a very slow fire.
